Low Carb Pizza Rolls
One of the things I miss when I'm watching my carb intake is pizza, especially the "pizza rolls" served by my local diner. I've tried a lot of different options for my "fix" but haven't been able to find anything that really does it.... until today! You could substitute some of the ingredients to make them lower fat if you needed to. As far as I can figure, these rolls are about 8-10 carbs apiece but it depends on what kind, and how much sauce you put on.
First you need to preheat your oven to 400 degrees and lightly spray a cookie sheet with cooking spray.
Then I started with low carb wraps / tortillas that I bought from Wal-Mart. I use one wrap for each roll.
I put a small amount of tomato sauce in the middle of the wrap. It was probably less than 1 Tbsp for each wrap.
Then I layered 4 slices of pepperoni on the sauce, then topped it with a stick of string cheese. One stick of string cheese and 4 slices of pepperoni for each wrap.
I wrapped up the tortillas "burrito style". It's important to make sure the ends are tucked in well or else all the fillings will just ooze out.
Brush with olive oil, and bake for 20 minutes.
So fast and easy and SOOOO good! I saved some to microwave for meals later, and I'm going to try freezing them so they are ready for days when I just don't have time to cook. I'm also looking forward to trying different ingredients like ham and cheese, olives, onions, green peppers, mushrooms. The combinations are limitless!
